  • 100 gm Honey,
  • 125 gm wheat flour,
  • 25 gm olive oil,

  • 1 tsp baking powder,
  • 1/2 tsp baking soda 


To start with this Diwali honey recipe, first whisk the curd until no lumps are formed and thereafter add almonds. Then, add honey, oil and whisk again.   1. In a 1-quart saucepan, heat all syrup ingredients over low heat, stirring occasionally, until warm. Thereafter heat a griddle or skillet over medium heat or heat an electric griddle to 375°F. Grease it with cooking spray, vegetable oil or shortening. To check if the surface is hot enough, just sprinkle a few drops of water and wait for them to disappear. Then, in a medium bowl, stir all pancake ingredients until blended properly. For each pancake, pour slightly less than 1/4 cup batter onto the hot griddle. Finally, cook the pancakes until the edges turn dry. Then, turn and cook the other sides until they turn golden. Lastly, serve this Diwali honey dish with a warm syrup.

  • 1 cup (150g) full-cream milk powder,
  • 1/2 cup (75g) self-raising flour,

  • 1/4 cup (60ml) milk,
  • 1/4 cup (60ml) thin cream,
  • Vegetable oil, to deep-fry,
  • Pistachio nuts, finely chopped, to serve,
  • Honey saffron syrup,
  • 1 cup (250ml) hot water,
  • 1/2 tsp saffron threads,
  • 1/2 cup (100g) caster sugar,
  • 3 cardamom pods, bruised,
  • 1 cinnamon stick,
  • 1/2 cup (125ml) honey, 


As a pro tip, it is always a better idea to prepare Gulab jamun one day in advance and soak them overnight in a syrup. Now, this honey recipe is basically prepared in 4 parts which are as follows: 

       1. Making syrup

First things first, to make this Diwali honey recipe start by making the Gulab jamun syrup. To make the same combine water and saffron in a saucepan. Then, set the mixture aside for 5 minutes until it sets. Thereafter, add sugar, cardamom and cinnamon and place the syrup over low heat. Keep stirring, for 1-2 minutes or until sugar dissolves. Thereafter, add honey and stir to combine. Bring to a simmer and cook, stirring occasionally, for 5 minutes or until syrup thickens slightly. 

       2. Combine

In a separate bowl, combine milk powder, flour, baking powder, cinnamon, cardamom and make a well in the centre. Pour milk and cream into the well and stir until a soft and slightly sticky dough forms. 

      3. Roll & cook

Roll heaped teaspoonfuls of dough into balls and place them on a plate. Heat enough oil in a saucepan over medium-high heat to 170°C. Then, place one-quarter of the dumplings in hot oil and cook, turning occasionally, for 2-3 minutes or until golden brown and cooked through. Use a slotted spoon to transfer to a plate lined with a paper towel. Furthermore, continue with this Diwali honey recipe by repeat the same procedure in 3 more batches with remaining dumplings. 

      4. Soak & serve

  • 300g flour,
  • 25g castor sugar,
  • 40g butter, in pieces,

  • 115ml milk,

Firstly, preheat the oven to 180C. Thereafter, start by sifting the flour into a bowl and stirring in the sugar. Then, rub in the butter until the mixture resembles breadcrumbs. Bake the scones for 13-14 minutes, until risen and golden brown.
